Ingredients
  

  • 1 lb lean ground beef
  • 1 tbsp olive oil
  • 1 medium yellow onion chopped
  • 2 cloves garlic minced
  • 15 oz tomato sauce
  • 1 cup beef broth or chicken broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1 tsp dried Italian seasoning
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper or to taste
  • 3 lb potatoes thinly sliced
  • 2 cups cheddar cheese shredded

Instructions
 

  • Preheat the oven to 375°F and lightly grease a casserole dish.
  • Warm the olive oil in a skillet over medium heat. Add the ground beef and onion, and cook until the beef is browned and the onion is soft. Stir in the garlic during the last minute.
  • Stir in the tomato sauce, broth, Worcestershire sauce, smoked paprika, Italian seasoning, salt, and black pepper. Let the mixture simmer for a few minutes.
  • Layer half of the sliced potatoes in the casserole dish, spoon over half of the beef mixture, then repeat with the remaining potatoes and beef mixture, finishing with sauce on top.
  • Cover and bake for 40 minutes, or until the potatoes are tender. Remove the cover, sprinkle the cheddar cheese over the top, and bake for 10 more minutes until melted and bubbly.
  • Let the casserole rest for 10 minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. For longer storage, freeze portions in freezer-safe containers once the casserole has cooled completely. Reheat in the oven, covered, until warmed through, or use the microwave for a quicker option. If the casserole seems a little dry, add a spoonful of broth before reheating.
