Ingredients
  

  • 6 large eggs
  • 3 tbsp mayonnaise
  • 1 tsp yellow mustard
  • 1 tsp sweet pickle relish
  • 1 tsp white vinegar
  • salt to taste
  • black pepper to taste
  • paprika for garnish

Instructions
 

  • Place the eggs in a saucepan and cover them with cold water. Bring the water to a gentle boil, then turn off the heat, cover the pan, and let the eggs sit until cooked through.
  • Move the eggs to an ice bath or run them under cold water until they are easy to handle. Peel the shells carefully and pat the eggs dry.
  • Cut each egg in half lengthwise. Gently lift out the yolks and place them in a medium bowl, then arrange the whites on a serving plate.
  • Mash the yolks with mayonnaise, mustard, relish, vinegar, salt, and pepper until the mixture is smooth and creamy. Taste and adjust the seasoning if needed.
  • Spoon or pipe the yolk mixture into the center of each egg white. A small cookie scoop or piping bag makes this step neat and easy.
  • Sprinkle paprika over the tops just before serving. Serve chilled for the best flavor and texture.

Notes

For easy peeling, use eggs that are a few days old if possible. Once they are cooked, chilling them quickly helps the shells come off more smoothly. Do not overmix the filling if you want a classic texture. Mash until creamy, but stop before it becomes too loose. If you are making these ahead, keep the whites and filling separate until close to serving time. This helps the eggs stay fresh and look their best.
