Ingredients
  

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • 0.25 teaspoon salt plus more to taste
  • 0.125 teaspoon black pepper
  • 1 to 2 teaspoons beet juice or natural red food coloring for the eye effect
  • 1 small black olive finely chopped or sliced, for the pupil look
  • Fresh chives or parsley optional, for garnish

Instructions
 

  • Place the eggs in a saucepan and cover them with cold water. Bring the water to a gentle boil, then lower the heat and cook until the eggs are hard-cooked, about 10 to 12 minutes.
  • Transfer the eggs to an ice bath or run them under cold water until fully cooled. Peel the shells carefully so the whites stay smooth and neat.
  • Slice each egg in half lengthwise and remove the yolks. Place the yolks in a bowl, then mash them with mayonnaise, Dijon mustard, vinegar, salt, and pepper until creamy.
  • Stir in a small amount of beet juice or food coloring until the filling has the shade you want. Start with a little, then add more if needed.
  • Spoon or pipe the filling back into the egg whites. Create a slight dome in the center so there is room for the eye detail.
  • Top each egg with a small piece of black olive to make the pupil effect. Add chives or parsley if you want a little fresh color around the plate.

Notes

If you want a lighter filling, swap part of the mayonnaise for plain Greek yogurt. If you prefer a sharper flavor, add a little extra mustard or vinegar. For the eye effect, beet juice gives a more natural color, while food coloring offers a brighter finish.
For the cleanest look, use eggs that are a few days old, since they usually peel more easily. Chill the eggs before filling if you want a firmer texture and sharper presentation. If you are piping the filling, a piping bag or zip-top bag with the corner snipped off makes the eggs look extra polished.
You can make these eggs more smoky by adding a pinch of smoked paprika to the filling. For a brighter flavor, stir in a little lemon juice or finely chopped dill. If you want a richer look, add a tiny dab of yellow mustard on top before placing the olive piece.
Store dragon eye deviled eggs in an airtight container in the refrigerator for up to 2 days. For the best texture and appearance, keep them chilled until serving. Deviled eggs are served cold, so there is no reheating needed.
