Ingredients
  

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon yellow mustard
  • 1 teaspoon apple cider vinegar
  • 0.25 teaspoon salt plus more to taste
  • 0.125 teaspoon black pepper
  • 0.25 teaspoon smoked paprika plus more for garnish
  • 2 teaspoons chives finely chopped, for garnish
  • black olives thinly sliced, for the horns and tail
  • cayenne optional, a tiny pinch for a little heat

Instructions
 

  • Place the eggs in a saucepan and cover them with cold water. Bring the water to a gentle boil, then turn off the heat, cover the pan, and let the eggs sit for 10 to 12 minutes.
  • Transfer the eggs to an ice bath or rinse them under cold water until fully cooled. Peel the eggs carefully, then slice each one in half lengthwise.
  • Scoop out the yolks and place them in a bowl. Mash the yolks with mayonnaise, mustard, vinegar, salt, pepper, smoked paprika, and cayenne if using. Mix until smooth and creamy.
  • Spoon or pipe the filling back into the egg white halves. Make the tops slightly rounded so they look neat and festive.
  • Cut the black olives into tiny horn shapes and a small curved tail piece for each egg. Press the pieces gently into the filling so they stay in place. Finish with a light sprinkle of smoked paprika and chopped chives.

Notes

Store the filled eggs in an airtight container in the refrigerator for up to 2 days. For the best texture, add the olive decorations and final garnish just before serving. These eggs are served cold, so reheating is not needed.
