Ingredients
  

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon yellow mustard
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon finely chopped chives
  • 2 tablespoons finely chopped turkey bacon cooked until crisp
  • 1 tablespoon ranch seasoning
  • salt to taste
  • black pepper to taste
  • smoked paprika for garnish

Instructions
 

  • Place the eggs in a saucepan and cover them with cold water. Bring the water to a gentle boil, then turn off the heat, cover the pan, and let the eggs sit until cooked through. Move them to an ice bath, cool completely, then peel.
  • Slice the eggs in half lengthwise and place the yolks in a bowl. Mash the yolks with mayonnaise, mustard, vinegar, ranch seasoning, salt, and pepper until smooth and creamy.
  • Spoon or pipe the yolk mixture back into the egg white halves. Be generous with the filling so each egg looks full and neat.
  • Sprinkle the tops with chopped crispy turkey bacon, chives, and a light dusting of smoked paprika. Serve chilled.

Notes

Use eggs that are a few days old, since they are often easier to peel. Chill the eggs before filling them, and keep the topping crisp by adding it right before serving. If you like a sharper flavor, add a tiny splash more vinegar to the filling. Store the filled eggs in an airtight container in the refrigerator for up to 2 days. For the best texture, keep the crispy topping separate and add it just before serving. These eggs are meant to be enjoyed cold, so no reheating is needed.
