Ingredients
  

  • 1 lb chicken tenders or thin chicken breast cutlets
  • 2 eggs beaten
  • 1 cup breadcrumbs or panko
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper or to taste
  • 0.5 cup flour for dredging
  • 4 wraps or large tortillas
  • 4 cups romaine lettuce chopped
  • 0.5 cup Parmesan cheese grated
  • 0.5 cup Caesar-style dressing store-bought or homemade
  • 1 tbsp butter or oil for cooking

Instructions
 

  • Season the chicken with salt, pepper, garlic powder, and onion powder. Set out three shallow bowls, one with flour, one with beaten eggs, and one with breadcrumbs or panko.
  • Dip each piece of chicken in the flour, then the egg, and finally the breadcrumbs, pressing gently so the coating sticks well.
  • Heat butter or oil in a skillet over medium heat, then cook the chicken until golden brown and cooked through. Transfer it to a plate and let it rest for a few minutes before slicing.
  • Lay out the wraps and add chopped romaine, sliced crispy chicken, Parmesan, and Caesar-style dressing. Keep the filling centered so the wrap rolls neatly.
  • Fold in the sides, then roll each wrap tightly from the bottom up. Slice in half if you like, and serve right away while the chicken is still crisp.

Notes

For the best texture, cook the chicken in a hot skillet so the coating turns golden before the inside dries out. Let the chicken cool slightly before assembling, because that helps keep the wrap from getting soggy. If you are making these ahead, keep the dressing separate until just before serving.
