Ingredients
  

  • 1 pound chicken cutlets or thin chicken breast pieces pounded evenly
  • 0.5 cup all-purpose flour
  • 2 eggs beaten
  • 1 cup bread crumbs or panko
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 0.25 cup oil for pan-frying
  • 4 romaine lettuce chopped
  • 0.25 cup Parmesan cheese finely grated
  • 0.33 cup Caesar style dressing made with mayonnaise, lemon juice, garlic, anchovy paste if desired, and Dijon mustard
  • 8 sandwich bread, ciabatta, or toasted rolls
  • 1 tomato slices optional

Instructions
 

  • Pat the chicken dry, then season it with salt, pepper, garlic powder, and smoked paprika. Set out three shallow bowls for flour, beaten eggs, and bread crumbs.
  • Dip each piece of chicken into the flour, then the egg, then the bread crumbs. Press lightly so the coating sticks well and bakes up extra crisp.
  • Heat oil in a skillet over medium heat. Cook the chicken until deeply golden on both sides and fully cooked through, then transfer it to a rack or paper towels.
  • In a bowl, toss the chopped romaine with Caesar style dressing and Parmesan. Keep it lightly dressed so the sandwich stays crunchy.
  • Slice and toast your bread or roll until the edges are crisp and the inside is warm. This helps hold the filling without getting soggy.
  • Layer the crispy chicken on the bottom piece of bread, add the Caesar salad mixture, and top with the remaining bread. Slice and serve right away.

Notes

Use thin chicken pieces so they cook quickly and evenly. Toasting the bread makes a big difference, especially if you like a sandwich with structure and crunch. For the best texture, dress the lettuce just before assembling. Keep the chicken, lettuce mixture, and bread separate for storage. Assemble the sandwich just before eating.
