Ingredients
  

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon yellow mustard
  • 1 teaspoon white vinegar
  • 0.25 teaspoon salt
  • 0.125 teaspoon black pepper
  • 1 to 2 teaspoons finely chopped chives plus more for garnish
  • paprika for topping
  • black olive slices or tiny olive pieces for decorating

Instructions
 

  • Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil, then turn off the heat, cover the pan, and let the eggs sit until cooked through. Move them to an ice bath so they cool quickly.
  • Once the eggs are cool, peel them carefully. Slice each egg in half lengthwise and gently remove the yolks into a mixing bowl.
  • Mash the yolks with mayonnaise, mustard, vinegar, salt, pepper, and chives until smooth and creamy. Taste and adjust the seasoning if needed.
  • Spoon or pipe the filling back into the egg white halves. For a spooky look, make the filling slightly swirled or piled high.
  • Finish with a light sprinkle of paprika and add olive slices or tiny olive pieces to create creepy eyes or eerie little details.

Notes

Use eggs that are a few days old if possible, since they usually peel more easily. Chill the filling before piping if you want a cleaner, neater shape. If the yolk mixture seems too thick, add a small spoonful of mayonnaise at a time until it reaches the texture you like.
