Equipment

  • 1 Saucepan
  • 1 bowl
  • 1 Spoon or piping bag for filling
  • 1 Ice Bath optional

Ingredients

  • 6 large eggs
  • 1 /4 cup mayonnaise
  • 2 tbsp plain Greek yogurt or sour cream
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp Dijon mustard
  • 1 tbsp lime juice or lemon juice
  • 0.25 tsp salt or to taste
  • 0.125 tsp black pepper or to taste
  • 2 tbsp green onions finely sliced, for garnish
  • 1 tbsp fresh cilantro optional, chopped, for garnish
  • 0.25 tsp crushed red pepper flakes optional, for extra heat

Instructions

  • Place the eggs in a saucepan and cover them with cold water. Bring the water to a gentle boil, then turn off the heat, cover the pan, and let the eggs stand until cooked through.
  • Move the eggs to an ice bath or cold water until fully cooled. Peel them carefully, then slice each egg in half lengthwise.
  • Remove the yolks and place them in a bowl. Mash them with mayonnaise, Greek yogurt, chili powder, smoked paprika, mustard, lime juice, salt, and pepper until smooth and creamy.
  • Spoon or pipe the filling back into the egg whites. Aim for a neat, generous swirl if you want a more polished look.
  • Top with sliced green onions, cilantro, and a light sprinkle of red pepper flakes if you like extra heat. Chill briefly before serving for the best flavor.

Notes

Store deviled eggs in an airtight container in the refrigerator for up to 2 days. Keep them chilled until ready to serve, and avoid leaving them out for long periods. These are best enjoyed cold, so reheating is not needed.
