Creamy Pasta Salad

  • 12 oz short-cut pasta such as rotini or penne
  • 0.5 cup mayonnaise
  • 0.5 cup plain Greek yogurt or sour cream
  • 2 tbsp lemon juice
  • 1 tbsp mustard
  • 1 tbsp honey
  • 0.25 cup red onion finely chopped
  • 0.5 cup celery diced
  • 0.5 cup red bell pepper diced
  • 0.5 cup cucumber diced
  • 0.5 cup carrot shredded
  • 2 tbsp fresh dill or parsley
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper or to taste

Instructions
 

  • Prepare pasta according to package instructions. Drain and rinse under cold water to stop the cooking process, then set aside.
  • In a large bowl, whisk together mayonnaise, Greek yogurt, lemon juice, mustard, honey, salt, and pepper until smooth.
  • Add chopped red onion, celery, bell pepper, cucumber, carrot, and fresh herbs into the dressing. Stir well.
  • Add the cooled pasta to the bowl and toss gently until everything is evenly coated.
  • Cover and let the salad chill in the fridge for at least 30 minutes. This helps the flavors meld beautifully.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Stir before serving. Do not freeze, as the creamy texture may change.
