Ingredients
  

  • 2 boneless skinless chicken breasts or thighs
  • 1 tablespoon olive oil or butter
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese freshly grated
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon parsley chopped

Instructions
 

  • Pat the chicken dry, then season both sides with salt, pepper, and Italian seasoning. Warm the oil or butter in a large skillet over medium-high heat, then sear the chicken until golden on both sides and cooked through. Transfer it to a plate.
  • Reduce the heat to medium and add a little more butter if needed. Stir in the minced garlic and cook just until fragrant, which keeps it from turning bitter.
  • Pour in the chicken broth and scrape up any browned bits from the pan. Add the cream, then whisk in the Parmesan cheese until the sauce turns smooth and slightly thickened.
  • Return the chicken to the skillet and spoon the sauce over the top. Let it simmer gently for a few minutes so the flavors come together, then garnish with parsley and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove over low heat or in the microwave in short bursts, adding a splash of broth or cream if the sauce needs loosening.
