Ingredients
  

Casserole

  • 2 cups cooked, shredded chicken rotisserie style or leftovers
  • 8 oz cream cheese softened
  • 1 cup sour cream
  • 1.5 cups shredded cheddar cheese divided
  • 0.5 cup shredded mozzarella cheese
  • 0.5 cup cooked turkey bacon crumbled
  • 0.5 cup sliced green onions plus extra for garnish
  • 1 packet ranch seasoning
  • 0.5 tsp garlic powder
  • 0.25 tsp black pepper
  • 1.5 cups cooked rice or cooked pasta for variation

Instructions
 

  • Preheat your oven to 350°F. In a large mixing bowl, combine the cream cheese, sour cream, ranch seasoning, garlic powder, and black pepper. Blend until smooth and creamy.
  • Add the shredded chicken, cooked rice, half of the cheddar cheese, mozzarella cheese, turkey bacon, and green onions to the bowl. Stir until everything is well coated and evenly mixed.
  • Transfer the mixture to a greased 9x13-inch baking dish. Sprinkle the remaining cheddar cheese over the top. Bake for 25-30 minutes, or until bubbly and golden brown on top. Garnish with extra green onions before serving.

Notes

  • Make sure your cream cheese is fully softened for easy mixing.
  • Use freshly grated cheese for the best melt and flavor.
  • Don’t overbake, as this can dry out your casserole—just bake until it is bubbling and lightly golden.
Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat covered at 325°F or in the microwave. Casserole can be frozen when wrapped tightly. Substitute Greek yogurt for sour cream or quinoa for rice, if desired.
