Ingredients
  

  • 1 cup warm milk
  • 2 tablespoons granulated sugar
  • 2 teaspoons instant yeast
  • 3 tablespoons unsalted butter melted and slightly cooled
  • 1 egg
  • 1 teaspoon salt
  • 3 cups all-purpose flour plus more as needed

Filling

  • 1 cup brown sugar
  • 2 tablespoons ground cinnamon
  • 3 tablespoons unsalted butter melted

Glaze

  • 1 cup powdered sugar
  • 2 tablespoons milk or cream more as needed
  • 1 teaspoon alcohol-free vanilla

Instructions
 

  • In a large bowl, whisk together the warm milk, sugar, and yeast. Let it sit briefly until it looks foamy. Add the melted butter, egg, and salt, then stir in the flour until a soft dough forms.
  • Knead the dough by hand or with a mixer until it feels smooth and elastic. Place it in a lightly greased bowl, cover it, and let it rise until puffy.
  • Mix the brown sugar and cinnamon in a small bowl. Once the dough has risen, roll it into a rectangle and brush it with melted butter.
  • Sprinkle the cinnamon sugar evenly over the dough. Fold or layer the dough as directed in your method, then cut it into small bite-sized pieces and arrange them in a greased baking dish or on a lined pan.
  • Bake the bites until they are lightly golden and cooked through. The kitchen should smell amazing by this point, with that sweet cinnamon aroma filling the air.
  • Whisk together the powdered sugar, milk, and alcohol-free vanilla until smooth. Drizzle it over the warm bites and serve right away for the best texture and flavor.

Notes

Use warm, not hot, milk so the yeast can work properly. Do not add too much flour. A softer dough usually gives you fluffier, more tender bites. Let the dough rise in a cozy, draft-free spot. For the best glaze, add it while the bites are still warm so it melts slightly into the tops.
