Chicken Fajita Bowl

Chicken Fajita Bowl is one of those easy dinners that feels colorful, fresh, and satisfying all at once. It brings together seasoned chicken, tender peppers, and all your favorite toppings in one cozy bowl.

Ingredients
  

  • 1 to 1 ½ pounds chicken breast or chicken thighs sliced into strips
  • 2 bell peppers sliced
  • 1 onion sliced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon lime juice
  • 4 cups cooked rice or cauliflower rice
  • 1 can black beans rinsed and drained
  • 1 cup corn
  • 1 avocado or 1/2 cup guacamole
  • ¼ cup fresh cilantro chopped
  • ½ cup salsa
  • ½ cup Greek yogurt or sour cream for serving

Instructions
 

  • Place the sliced chicken in a bowl with olive oil, garlic powder, cumin, smoked paprika, chili powder, salt, pepper, and lime juice. Toss well so every piece is coated.
  • Heat a large skillet over medium-high heat. Add a little oil, then cook the sliced peppers and onions until they soften and pick up a little color. Transfer them to a plate.
  • In the same skillet, cook the seasoned chicken until it is browned and cooked through. Stir occasionally so the strips cook evenly.
  • Divide the rice into serving bowls, then add black beans and corn. Spoon the chicken and vegetables over the top.
  • Finish with avocado, salsa, cilantro, and a spoonful of Greek yogurt or sour cream. Serve with extra lime wedges if you like a brighter finish.

Notes

Store the chicken, vegetables, rice, and toppings in separate airtight containers when possible. They will keep well in the fridge for up to 4 days. Reheat the chicken, vegetables, and rice in the microwave or in a skillet until hot, then add the fresh toppings just before serving.
