Ingredients
  

  • 1 pound shrimp peeled and deveined
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 2 cups cooked rice or quinoa
  • 1 bell pepper sliced
  • 1 zucchini chopped
  • 1 cup corn
  • 1 avocado sliced
  • lime wedges for serving
  • 2 tablespoons fresh parsley chopped
  • Greek yogurt or sour cream for serving

Instructions
 

  • Pat the shrimp dry, then toss them with olive oil, Cajun seasoning, and garlic powder until every piece is well coated.
  • Warm a skillet over medium heat and cook the bell peppers, zucchini, and corn until they are tender with a little color around the edges.
  • Add the shrimp to the hot skillet in a single layer. Cook for a few minutes per side until pink, opaque, and just cooked through.
  • Spoon the rice or quinoa into bowls, then top with the vegetables and shrimp. Add avocado, parsley, and a squeeze of lime.
  • Serve with a dollop of Greek yogurt or sour cream if you like a creamy finish, then enjoy right away.

Notes

Do not overcrowd the shrimp in the pan, or they can steam instead of sear. Keep the cooking time short, since shrimp cook quickly and can turn rubbery if left too long. If you are meal prepping, store the avocado separately and add it just before serving.
