Ingredients

Salad

  • 4 cup fresh broccoli florets chopped into bite-sized pieces
  • 0.5 cup red onion finely diced
  • 0.5 cup dried cranberries
  • 0.5 cup sunflower seeds or chopped almonds, for crunch
  • 0.5 cup turkey bacon cooked and crumbled, or use smoked paprika for a vegetarian version

Dressing

  • 0.75 cup mayonnaise
  • 2 tbsp honey or maple syrup
  • 2 tbsp apple cider vinegar
  • salt to taste
  • black pepper to taste

Instructions

  • Wash and thoroughly dry the broccoli. Chop into small, bite-sized pieces.
  • In a bowl, whisk together mayonnaise, honey, apple cider vinegar, salt, and pepper until smooth.
  • In a large mixing bowl, add the broccoli, red onion, cranberries, sunflower seeds, and turkey bacon. Pour the dressing over and toss until all the ingredients are evenly coated.
  • Cover and refrigerate for at least 30 minutes before serving to let the flavors meld together.

Notes

  • Chop broccoli into small pieces for the best texture and flavor in each bite.
  • Let the salad rest in the fridge so the dressing absorbs into the veggies.
  • Use fresh, crisp broccoli for the best crunch.
Store leftovers in an airtight container in the fridge for up to 3 days. Stir before serving as the dressing may settle. This salad is best enjoyed cold and does not require reheating.
