Ingredients
  

  • 6 large eggs
  • 1 ripe avocado
  • 3 tablespoons mayonnaise
  • 1 tablespoon sour cream
  • 1 teaspoon lemon juice
  • 1 teaspoon ranch seasoning
  • 0.25 teaspoon salt or to taste
  • 0.125 teaspoon black pepper
  • 1 tablespoon chives chopped, for garnish
  • smoked paprika optional for topping

Instructions
 

  • Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil, then reduce the heat slightly and cook until the eggs are hard-boiled. Move them to an ice bath so they cool quickly and peel more easily.
  • Once the eggs are cool, peel them carefully and slice each one in half lengthwise. Gently remove the yolks and place them in a mixing bowl.
  • Add the avocado, mayonnaise, sour cream, lemon juice, ranch seasoning, salt, and pepper to the bowl with the yolks. Mash everything together until the filling is smooth and creamy. Taste and adjust the seasoning if needed.
  • Spoon the filling into the egg whites, or use a piping bag for a neater look. The mixture should be thick, soft, and easy to mound into each egg half.
  • Finish with chopped chives and a light sprinkle of smoked paprika, if you like. Serve the eggs chilled for the best texture and flavor.
