Fresh chives or small pieces of green bell pepper for the stems
Extra smoked paprika for dusting
Instructions
Place your eggs in a large saucepan and cover them with cold water by at least one inch. Bring the water to a rolling boil, then remove the pan from the heat, cover it with a lid, and let the eggs sit for 12 minutes. Immediately transfer the eggs to a bowl filled with ice water for 10 minutes. This stops the cooking process and makes the eggs much easier to peel.
Gently peel the cooled eggs and slice them in half lengthwise. Carefully remove the yolks and place them into a medium mixing bowl. Set the empty egg white halves aside on a clean plate or a serving tray. Use a fork to mash the yolks until they are fine and crumbly, ensuring there are no large lumps left.
Add the mayonnaise, mustard, pumpkin puree, smoked paprika, salt, and pepper to the mashed yolks. Stir the mixture vigorously until it is completely smooth and creamy. Taste the filling and adjust the salt or pepper if needed. The pumpkin puree and paprika should give the mixture a vibrant orange color that resembles a pumpkin.
Spoon the yolk mixture back into the centers of the egg white halves. For a cleaner look, you can use a piping bag or a plastic storage bag with the corner snipped off. Fill them generously so the filling sits slightly above the edge of the egg white, creating a rounded top that looks like a pumpkin.
Use a clean toothpick to gently press vertical lines into the yolk filling, mimicking the ridges of a pumpkin. Start from the center and pull outward to the edges. Once the ridges are formed, lightly dust the tops with a bit more smoked paprika. Finally, cut small pieces of chives or bell pepper and press them into the top center of each egg to serve as the stem.
