Pumpkin Deviled Eggs

Pumpkin Deviled Eggs

  • Total Time: 27 minutes

Ingredients

  • 6 large eggs
  • 2 tablespoons mayonnaise
  • 1 tablespoon pumpkin puree
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 12 small pieces of fresh chives or green bell pepper strips

Instructions

  1. Place your eggs in a single layer in a medium saucepan and cover them with at least an inch of cold water. Bring the water to a full boil over high heat, then immediately remove the pan from the heat and cover it with a lid. Let the eggs sit in the hot water for 12 minutes to ensure the yolks are fully set but still creamy. Transfer the eggs to an ice bath for 5 minutes to stop the cooking process and make peeling easier.
  2. Peel the eggs carefully and slice them in half lengthwise. Gently remove the yolks and place them into a small mixing bowl. Use a fork or a potato masher to crumble the yolks until no large lumps remain. Add the mayonnaise, pumpkin puree, mustard, smoked paprika, garlic powder, salt, and pepper. Stir everything together until the mixture is completely smooth and holds its shape.
  3. Spoon the yolk mixture back into the egg white halves, or use a piping bag for a cleaner look. Instead of leaving the top smooth or ruffled, mound the filling slightly so it sits higher than the egg white. Use a toothpick or the back of a small knife to gently press vertical lines into the filling, starting from the center and moving outward. This creates the characteristic ridges of a pumpkin.
  4. Take your small pieces of chives or green bell pepper and stick one into the center of each yolk mound to act as a stem. If you want a more vibrant orange color, lightly dust the tops with a tiny bit more smoked paprika. Arrange the finished eggs on a platter and keep them chilled until you are ready to serve your guests.
