12 small red heart sprinkles or tiny pieces of red bell pepper cut into heart shapes
1 teaspoon fresh chives, finely chopped (optional for garnish)
Instructions
Step 1: Hard Boil the Eggs Place your eggs in a single layer in a medium saucepan and cover them with at least an inch of cold water. Bring the water to a full boil over high heat, then immediately remove the pan from the heat, cover it with a lid, and let the eggs sit for 10 to 12 minutes. Transfer the eggs to an ice bath for 5 minutes to stop the cooking process and make them easier to peel.
Step 2: Peel and Prep the Eggs Gently crack the eggshells and peel them under cool running water. Once peeled, pat the eggs dry with a paper towel. Use a sharp knife to slice each egg in half lengthwise, then carefully remove the yolks and place them into a small mixing bowl, setting the whites aside on a serving platter.
Step 3: Create the Grinch Green Filling Using a fork, mash the egg yolks until they are fine and crumbly. Add the mayonnaise, mustard, salt, and pepper, then stir until the mixture is completely smooth. Add the green gel food coloring one drop at a time, mixing thoroughly until you reach your desired shade of Grinch green.
Step 4: Pipe the Filling Transfer the green yolk mixture into a piping bag fitted with a star or round tip. If you do not have a piping bag, a plastic storage bag with a corner snipped off works just as well. Generously pipe the filling into the hollow centers of the egg whites, slightly mounding it at the top for a polished look.
Step 5: Add the Grinch Heart Place one red heart sprinkle or a small heart-shaped piece of red bell pepper onto the side of the green filling. This represents the Grinch’s heart that was two sizes too small. Sprinkle with chopped chives if you want a little extra flavor, and serve immediately or refrigerate until party time.
