Deviled Egg Trees

Deviled Egg Trees

  • Total Time: 32 minutes

Ingredients

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon yellow mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 drops green liquid food coloring or 1/2 teaspoon matcha powder
  • 1 small red bell pepper, finely diced for ornaments
  • 1 yellow bell pepper, cut into tiny stars for the toppers
  • 1 tablespoon fresh chives, finely chopped
  • 1/2 teaspoon smoked paprika for dusting

Instructions

  1. Place your eggs in a single layer in a saucepan and cover them with at least an inch of water. Bring the water to a rolling boil, then remove from heat, cover the pan, and let them sit for exactly 12 minutes. Immediately transfer the eggs to an ice bath for 5 minutes to ensure they are easy to peel and have no green ring around the yolk.
  2. Gently crack the shells and peel the eggs under cool running water. Pat them dry with a paper towel. Slice each egg in half lengthwise. Carefully remove the yolks and place them into a small mixing bowl, then set the white halves aside on a serving platter.
  3. Mash the egg yolks with a fork until they are fine and crumbly. Add the mayonnaise, mustard, salt, and pepper. Mix until the filling is completely smooth and creamy. Add your green food coloring or spinach powder one bit at a time, mixing thoroughly until you reach a vibrant Christmas tree green color.
  4. Transfer the green yolk mixture into a piping bag fitted with a large star tip. Pipe the mixture into the center of each egg white, swirling upward in a conical shape to mimic the look of an evergreen tree. Aim for a bit of height to make the tree shape more distinct.
  5. Carefully place your tiny yellow pepper stars at the very top of each green mound. Distribute the small red pepper bits around the sides of the green yolk to look like ornaments. Sprinkle the base with finely chopped chives or a light dusting of smoked paprika for extra flavor and contrast.
