Apple Cheddar Crostini Thanksgiving appetizer

Apple Cheddar Crostini Thanksgiving appetizer

  • Total Time: 25 minutes

Ingredients

  • 1 French baguette, sliced into half inch rounds
  • 1/4 cup extra virgin olive oil
  • 8 ounces sharp white cheddar cheese, sliced to fit the bread
  • 2 large Honeycrisp or Granny Smith apples, very thinly sliced
  • 3 tablespoons honey
  • 2 teaspoons fresh thyme leaves
  • Cracked black pepper to taste

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Arrange the baguette slices in a single layer on a large baking sheet. Using a pastry brush, lightly coat the top of each slice with extra virgin olive oil. Place the tray in the oven and toast for about 5 to 7 minutes, or until the edges are golden brown and crisp.
  2. Remove the baking sheet from the oven and carefully place a slice of sharp white cheddar onto each toasted bread round. Return the pan to the oven for another 2 to 3 minutes, just until the cheese is melted and starts to bubble slightly at the edges.
  3. While the cheese is melting, slice your apples into thin wedges. If you are worried about them browning, you can toss them gently in a tiny bit of lemon juice. Pull the crostini out of the oven and immediately top each warm cheesy bread slice with one or two apple wedges.
  4. Drizzle the honey over the top of the assembled crostini. Sprinkle the fresh thyme leaves and a bit of cracked black pepper over everything. Serve these immediately while the bread is crunchy and the cheese is still warm and soft.
